Ingredients:

Chicken and mayo sandwich :
1 cup of shredded chicken
1/4 cup of mayo
1/2 clove of garlic
Lemon juice
Salt and black paper to taste
1/4 cup of parsley
Whole wheat bread

Cheese pesto and dried tomatoes sandwich:
Cheese ( frech mozzarella)
Pesto sauce
Sun dried tomatoes packed in olive oil
Multigrain bread or whole wheat

Tuna tortilla:
1/2 a can of tuna
2 tbsp onion
2 tbsp olives
1/4 cup of bell peppers
Salt and black pepper to taste
1 tbsp olive oil
2 tbsp lemon juice
Tortilla bread
Chilli paste or cream cheese
Lettuce

Roasted vegetables tortilla :
Zucchini, eggplant, bell peppers, onions
salt and black pepper to taste
Drizzle of olive oil
Tortilla bread
Hummus
Lettuce
Feta cheese

Quinoa salad:
1 cup of cooked quinoa
1/2 cup corn
1/2 cup purple cabbage
1/2 cup cucumber
1/2 cup shredded carrots
2 tbsp onions
1/4 cup bell peppers
Juice of one lemon
3 tbsp olive oil
Salt and black pepper to taste
Fresh mint leaves
1 tsp cumin

Chickpea salad:
1 cup of cooked chickpea
1/2 cup chicken cubes
1/2 cup corn
1/2 cup cucumber
1/2 cup tomatoes
1/2 cup parsley
2 tbsp onions
2 tbsp olive oil
Juice of a small lemon
1 tsp cumin
Salt and black pepper to taste
feta cheese
