3 Make-Ahead Holiday Breakfast Recipes

Today I’m sharing 3 make-ahead traditional holiday inspired breakfast recipes with a twist! I’ve got Gingerbread Slow Cooker Oatmeal, Apple Crumble French-Toast Casserole and a Sweet Potato Crust Quiche all waiting for you to cook up!

Apple Crumble French Toast Casserole
1 loaf bread cut into large cubes (I used Challah bread but sourdough would work well too)
2 ½ cups soy milk
7 Great Value Organic Eggs
¼ cup maple syrup
3-4 small apples chopped (roughly 2 ½ cups)
1 tsp. cinnamon
1/4 tsp. nutmeg

1 cup rolled oats
1/3 cup oat flour
1/4 cup coconut sugar
1/2 tsp. cinnamon
Pinch sea salt
1/4 cup cold coconut oil
1/3 cup Great Value Pecans Chopped

Bake at 350F covered for 40 min and uncovered for 15 min.

Gingerbread Slow Cooker Oatmeal
1cup steel cut oats
1 can full fat coconut milk
3 cups filtered water
1 banana chopped
1 tbsp. coconut oil
1 tbsp. maple syrup
1 tbsp. coconut oil
2 tbsp. Great Value Molasses
1/2 tbsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground clove
1 tsp. ground ginger
1 tsp. vanilla extract
Pinch of salt

Sweet Potato Crust Quiche
2 sweet potato grated (3 1/2 cups)
1 tbsp. spelt flour
1 egg
1 tbsp. coconut oil
1/2 tsp. sea salt
1/4 tsp. black pepper
1/4 tsp. paprika
1/2 tsp. garlic powder
Bake @ 425F 20-25min

5 Great Value Organic Eggs
1 cup unsweetened soymilk
¼ cup soft goat cheese
2 cups sliced mushrooms
2 shallots finely chopped
2 leafs of fresh sage thinly sliced
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. nutmeg
1/2 tsp. garlic powder
Bake 350F for 40 min covered with foil and
20 min uncovered
Let sit for 10 min before cutting.
