I LOVE TO COOK. However, I have a busy schedule as a college student and working part-time – not to mention an hour commute home! So sometimes when I get home, and I’m starving, I just don’t want to cook nor do I have the energy. These are three of my go-to lazy plant based, vegan dinner recipes for nights I’m feeling tired, lazy, or just not into cooking.
To prepare for these lazy nights, I stock lots of frozen vegetables, quick rice, veggie burgers, beans, TVP, and sauces like tamari, salsa, and mixed spices. If you have these on hand, you’re set for a no-cook dinner!
TVP Fried Rice
1 tsp avocado oil (or water for sautéing)
1/2 onion, diced
1 cup frozen broccoli florets
1 cup frozen peas and carrots
1/2 cup re-hydrated TVP such as Bob’s Red Mil
1/2 tsp garlic powder
1/2 tsp onion powder
2 cups cooked rice
2-3 tbsp low sodium tamari or soy sauce
1 tsp toasted sesame oil
salt and pepper to taste
Heat a large nonstick skillet over medium high heat.
Add the avocado oil and onion with a pinch of salt and pepper. Stir, and cook for 4-5 minutes until onion begins to soften. Add broccoli and cook for another 3 minutes. Add peas, carrots, TVP, garlic and onion powder. Stir, and cook for 5 minutes. Add cooked rice and tamari or soy sauce, stirring so that all rice mixture is coated in the sauce. Turn off the heat and add the toasted sesame oil, and salt and pepper to taste.
