6 LARGE EGGS
2 TBSP OF MAYONAISE
1/2 TSP. OF MUSTARD
1 TBSP. OF SWEET PICKLE JUICE
1 TBSP. OF PICKLE RELISH (OPTIONAL)
Add 2” of water to a medium saucepan. Bring the water to a gradual boil on medium heat. Gently place 6 eggs in the boiling water. (use a large spoon) Boil on medium heat for 10 minutes and 12 if jumbo size. Rinse eggs under cold water. Crack the eggs by tapping it on the edge of your sink. Peel under cold water for best results.
Half the eggs with a serrated knife.
Remove the yellows and place in a bowl with the ingredients listed above.
TASTE: add pepper and a pinch of sugar if desired. OPTIONS: Sprinkle with Paprika
