    Rice paper turns rock hard after an hour? You would have to eat it immediately. Not to mention you have to wrap it tighter. This dish aside, the sauce looks great!

  17. Peanut butter jelly sandwich. Potato chips. twinkle, apple. I ate this for 12 years in school. I am 70 now and still working, No problems at all.

  18. Love these lunch ideas Sara Lynn! Definitely going to try that miso dressing and the mango dipping sauce. Just a tip as someone who is obsessed with summer rolls – you don't actually need to soak the rice paper for that long. Just one or two dips into lukewarm water and you can start loading on your ingredients. As the paper sits, it will soften so by the time you're ready to roll, it'll be perfectly pliable.

    My favorite greens for meal prep recently have been in the pre packaged cruciferous crunch mix from Trader Joe’s. Not expensive but very hardy 👌
